Motorcycle Birthday Cake! Big Challenge
One of my most favorite cakes of all time, a 3 dimensional motorcycle for a 60th birthday! The body of the motorcycle is made of pound cake, the wheels, tank, seat and saddle bags are made of rice krispie treats. The handle bars are actually straws, covered in fondant.

Chocolate Mocha Strawberry Cake
My prize winning, Chocolate Mocha Strawberry Cake!! It won 2nd place in a local chocolate dessert contest and I am going to share the recipe with you!
1 Dark chocolate cake mix
1 box Chocolate covered strawberry instant pudding (or 1 box chocolate instant pudding and a couple of teaspoons of strawberry nesquick)
1 C Oil
1/2 C Chocolate Mocha Creamer (liquid type)
1/2 C Sour Cream
1/2 C Strawberry Yogurt (1 container)
4 eggs
Beat on low speed all wet ingredients, slowly add dry ingredients and beat on low until combined. Beat on high for 2 minutes. Pour into 2, 8 inch cake pans that have been coated with Baker's Secret cooking spray..
Bake on 350 for approx 45 minutes....times may vary depending on your oven, this cake does bake a bit longer than the box directions indicate, Cake will be done when you press gently on the top and it springs back
Let layers cool, then remove from pans and place bottom layer on cake plate.
Fill with Strawberry Preserves
Frosting:
1 C. Shortening
1 box Strawberry Jello
1 2lb bag of powdered sugar
enough Choc Mocha coffee creamer to make a nice, spreadable consitency
Beat shortening until smooth, turn speed to low and add the jello and powdered sugar, a little at a time. Stir in creamer until desired consistency is reached
Frost cake and enjoy! I sometimes add chocolate curls to the top if I want to be a little fancier ;)

Chicago Cubs fan Birthday cake
Chicago Cubs baseball jersey birthday cake. I carved the t shirt from a half sheet cake and then used buttercream frosting to cover it. The Cubs logo, letters and numbers were all cut from moldable buttercream, which works much like fondant. The pros of moldable buttercream are that it is easy to work with and tastes much better than fondant. It works well for flat or cut out decorations. It can be used for molding figures but I don't think it would hold up and be as durable as fondant in that situation. I haven't tried covering a cake with it, but that may be something to try someday. Get the recipe for moldable buttercream here

My Daughter's 6 Foot Long Wedding Cake
This is the monumental, 6 foot long Wedding Cake I made for my daughter's wedding last year. It took 20 cake mixes total! I finished the decorating at about 3 am the morning of the wedding. It is actually a little over 6 feet long since that is a 6 foot table and we had to curve it back around!
Hawk and Fish Birthday Cake
My son wanted a red tail hawk catching a fish for his birthday cake last year. I had a lot of trouble with the head lol, but the rest turned out ok.

Male stripper cake I made for an ladies only party. I built up his muscles and "assets" with cake that was carved off and covered him in fondant.
Finger Nail Polish Cake for Daughters Birthday
Nail polish bottle cake for my daughter's birthday. I made the lid out of a paper towel roll covered in fondant,
Baby Bump Baby Shower Cake for Baby Girl
Baby bump cake made for a baby girls shower. Used a pyrex bowl for the belly and for the breasts, I used a copper mold that was oval shaped and cut it in half. I love using copper molds to bake cakes in, they seem to heat very evenly, baking the cake perfectly!

Halloween Cake
The Halloween cake I did this past year! I was practicing using several tiers because I'll be doing a very tall cake for my daughters wedding in Sept. There is a Halloween scene between each layer, most of the characters were made of fondant.

Tow Mater Cake from the movie Cars
This is a cake I did for a friends son's 1st birthday! The theme was Cars so we went with Tow Mater! The whole thing is made from home made pound cake and covered in fondant! Actually one of the easier cakes I've done!

Sunflower English Toffee Pound Cake
English toffee pound cake! I used my regular pound cake recipe but substituted Bailey's Irish Creme for the vanilla and added two crushed Heath bars to the batter. However, next time I think I need 3 bars instead of two and I think I will run them through the food processor to make fine crumbs that will just add flavor. I think I didn't crush them fine enough this time and many of the pieces settled to the bottom! It was still very good, I just think it needs more "toffee" flavor. Then I just did a simple basket weave and added sunflowers made from buttercream frosting.

Toffee pound cake
I have been thinking about something for awhile! I make a lot of cakes but they are always "for" something! I want to make a cake just for "fun"! And I love my lb cake recipe but I also would like to switch it up a little. So, this weekend I am going to try putting some shaved chocolate and heath bar pieces in the batter and add a little Irish Cream to it, sort of an English toffee pound cake (except I guess it would be "Irish Toffee") hahahahahaha! Then I'm going to decorate it with sunflowers! We'll see how it turns out!!

Pink and Black Country Music Cake
This years birthday cake for my daughter! She wanted pink and black with a country western theme! I did the hat, boots and guitar out of fondant and uses some glitter gel too. This was the first time I tried a high humidity recipe for frosting and I wish I had used it before because it worked so much better than usual this time of year!
